Description
Borlotti beans, popular in Italian and Colombian cooking, have a semi-sweet flavor and creamy texture. High in protein, fiber, and folate, they make a great vegetarian protein source. Use them in stews, soups, salads, or dips. To cook, soak for 6–10 hours, then drain and boil in three times the water until tender, about 2–3 hours.
