Sprouted Moong & A2 Paneer Tikki
Ingredients
• Sprouted moong beans – 1 cup (lightly steamed for 5 mins)
• A2 paneer – ½ cup (grated)
• Boiled potato – 1 medium (mashed, acts as a binder)
• Onion – 1 small (finely chopped)
• Green chili – 1 (finely chopped, optional for spice)
• Ginger-garlic paste – 1 tsp
• Coriander leaves – 2 tbsp (finely chopped)
• Chaat masala – ½ tsp
• Cumin powder – ½ tsp
• Garam masala – ¼ tsp
• Turmeric powder – ¼ tsp
• Salt – to taste
• Besan (gram flour) – 2 tbsp (for binding, can replace with oats powder)
• Oil / ghee – 2–3 tbsp (for shallow frying)
Method
Step 1: Prepare the mixture
1. Lightly mash the steamed sprouted moong beans in a bowl (keep some whole for
texture).
2. Add grated A2 paneer, boiled potato, onion, green chili, ginger-garlic paste, and
coriander leaves.
3. Mix in the spices – chaat masala, cumin powder, garam masala, turmeric, and salt.
4. Add besan and mix well until the mixture holds shape.
Step 2: Shape the tikkis
1. Grease your hands with a little oil.
2. Take small portions of the mixture and shape into round, flat tikkis.
Step 3: Cook the tikkis
1. Heat a non-stick pan with 2–3 tbsp oil or ghee.
2. Place tikkis in batches and shallow fry on medium flame.
3. Cook each side until golden brown and crispy.

Step 4: Serve hot
1. Drain excess oil on a kitchen towel.
2. Serve hot with green chutney, tamarind chutney, or yogurt dip.
