Little Millet Ghee Rice

Little Millet Ghee Rice is a hearty and nutritious dish that's easy to prepare. Here's a simple recipe:

Ingredients:

  • 1 cup Little Millet
  • 2 cups Water
  • 2 tablespoons Ghee (Clarified Butter)
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Mustard Seeds
  • 1 Onion, finely chopped
  • 2 Green Chilies, slit lengthwise
  • A few Curry Leaves
  • Salt to taste
  • Fresh Coriander Leaves for garnish (optional)

Preparation Method:

Rinse the little millet thoroughly under cold water until the water runs clear. Drain and set aside.

In a deep saucepan or pot, heat 1 tablespoon of ghee over medium heat. Add the cumin seeds and mustard seeds and let them splutter.

Add the chopped onion, green chilies, and curry leaves to the pan. Sauté until the onions turn translucent.

Add the rinsed little millet to the pan and sauté for 2-3 minutes, stirring continuously.

Pour 2 cups of water into the pan and add salt to taste. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low. Cover the pan with a lid and let the millet simmer for about 15-20 minutes, or until all the water is absorbed and the millet is cooked through.

Once the millet is cooked, remove the pan from heat and let it sit covered for a few minutes.

Fluff the cooked millet with a fork and transfer it to a serving dish.

In a small pan, heat the remaining tablespoon of ghee. Pour the hot ghee over the cooked millet and gently toss to coat.

Garnish with fresh coriander leaves if desired, and serve hot.
