Jowar Idli

Ingredients:

  • 1 cup Jowar Flour (Sorghum Flour)
  • 1 cup Bombay Rava (Sooji/Semolina)
  • 1 cup Curd
  • 1/2 cup Green Peas
  • 1/2 cup Grated Coconut
  • 1/4 cup Besan (Gram Flour)
  • 1 tsp Green Chili (Crushed)
  • 1/2 inch Ginger (Grated)
  • 2 tbsp Coriander Leaves (Chopped)
  • 1/2 tsp Baking Soda
  • Salt to taste

Preparation Method:

In a mixing bowl, combine the jowar flour, Bombay rava, curd, and salt. Mix well and let it rest for 15-20 minutes.

In the meantime, grind the green peas, grated coconut, ginger, and green chilies to a coarse paste without adding water.

Add the ground mixture to the jowar flour mixture along with besan and chopped coriander leaves. Mix well to form a smooth batter. Adjust the consistency by adding water if necessary.

Heat water in the idli steamer or a large pot. Grease the idli molds with oil or ghee.

Just before steaming, add baking soda to the batter and mix gently.

Pour the batter into the greased idli molds and place them in the steamer. Steam for 12-15 minutes or until the idlis are cooked through.

Once done, remove the idli molds from the steamer and let them cool for a couple of minutes.

Carefully unmold the idlis using a spoon and serve hot with chutney or sambar.
